This Muxbal Decaf, whose Mayan name means “place surrounded by clouds," comes from a group of smallholder producers in the Unión Juárez region of Chiapas. These farmers, many of whom run family-owned operations, are deeply committed to quality and sustainability. Their cultivation methods focus on using rich volcanic soils and shade-grown practices, which are traditional techniques that contribute to complex flavor profiles. Most of these producers are part of cooperatives or groups that support their communities
This reflects their dedication to environmental conservation and the well-being of their workers. Collaboration and the exchange of knowledge are pillars of their work, ensuring that each harvest maintains the high-quality standards for which the region is known.
This lot underwent washed and MC (methylene chloride) decaffeination. This is a common and effective method where the green coffee beans are first steamed to open their pores. They are then rinsed with the solvent methylene chloride, which bonds with and removes the caffeine. The beans are steamed once more to evaporate any residual solvent, resulting in a coffee that is 99.9% caffeine-free while preserving much of the original flavor profile.
