After harvesting, the coffee cherries are depulped, leaving the mucilage intact, and then placed in a tank for an impressive 170 hours of anaerobic fermentation. While such a long fermentation period might seem risky, the Raigosa brothers have mastered the process, carefully controlling sugar breakdown in a low-temperature environment, ideal for extended fermentation.
The result of this process is a vibrant yellow fruit profile, reminiscent of tropical flavors, inviting coffee lovers to savor a taste of summer in every cup. This unique coffee not only highlights the quality of the beans but also reflects the innovative spirit of the community.
