Huehuetenango is renowned for its exceptional coffee, and Urisar is on the cutting  edge of Huehuetenango’s coffee farmers as a producer of natural coffees. His  passion for innovation and experimentation has paid off, and we are thrilled to be  working with him for the first time with the 2021 harvest.  

Urisar is a third generation farmer, following in the footsteps of his parents and  grandparents as a coffee grower in the La Libertad area. These generations gave him a deep interest in farming practices, and he began studying to be an agronomist in 2010. Now, with a decade of experience in this field, and in the last 5 years he has set his sights on quality coffee and innovations in coffee processing.

For this natural coffee lot, Urisar ensures that the pickers select the ripest possible coffee cherries. After harvest, the cherries are brought to the mill and rinsed in clean water. This rinse not only removes dust and dirt on the surface of the coffee cherries, but also serves to homogenize the temperature of the fruits. Unripe or malformed cherries will float to the surface and can be skimmed off during the rinse, which also helps achieve a more uniform and higher quality coffee lot.  

After rinsing, the coffee is moved the same day to raised drying beds. The drying cherries are turned every hour to ensure thorough and uniform drying, which lasts for about 23 days. Then, the coffee is bagged and stored until it is ready for delivery to our warehouse. The coffee is transported via truck from Huehuetenango to Fraijanes for dry-processing under the watchful eyes of our experienced mill team, where it will then be bagged and stored until it is ready for export.
