One of my main goals is to encourage coffee drinkers to explore and develop their taste for coffee. Fundamental to that is good brewing technique to fully represent the coffee. And fundamental to that is grinding coffee evenly to optimize extraction. If you have a "spice," or blade, grinder you're not getting an even particle size. The blade chops unevenly, leaving you with a mix of coffee dust and chunks, and there's no way to adjust it. Burr grinders use opposing surfaces to evenly grind coffee beans and are adjustable, so you can use one grinder for many different brewing styles.
The Encore is a sturdy, all-purpose, entry-level grinder. It's not the cheapest but it has become the industry standard because of its quality and Baratza's customer service (and it comes with a one-year warranty).
